SPICY SAUSAGE, KALE, AND POTATO SOUP

There’s nothing more delicious to me than a thick & hearty soup when it’s cold out. If you ask my husband he would say the thing I make the most is soup. It’s just so easy. Throw everything into a pot and it’s an instant meal with everything you need; protein, vegetables, and carbs!  This soup is amazing because it packs in a ton of kale. I love adding kale or spinach to a soup to brighten it up get some greens into your meal!

You’ll Need:

1 lb spicy italian sausage

1 large onion chopped

2 tablespoons butter or olive oil

3 garlic cloves, minced

1 teaspoon salt & 1 teaspoon pepper

2 large bunches of kale, stemmed & chopped

4 medium or 2 large russet potatoes

8 cups chicken broth or stock, 2 boxes

1/2 cup heavy cream

Instructions:

1. Heat a large pot over medium-high heat. I usually add a little olive oil or butter so the sausage doesn’t stick to the bottom of the pan.  Add the sausage, begin to break it up with a wooden spoon, and cook until it is has fully browned. Remove sausage and transfer to a bowl. Set aside.

2. Lower the heat to medium, add the butter or oil, and toss in the onions and garlic. Stir until translucent about 3 to 5 minutes. Season with salt and pepper. Add the chopped kale in batches, allowing it to wilt down as it cooks. Stir in the sliced potatoes and cooked sausage.

3. Pour in the chicken stock or broth and bring soup to a boil. Lower the heat and simmer until the potatoes are cooked tender, but not mushy.  Taste the soup for seasoning and add more salt and pepper if needed. Once the soup is fully cooked stir in the heavy cream. Serve with crusty bread.
