Happy Monday! I’m so excited to be sharing this recipe with you guys! It’s been awhile since I’ve shared recipes on the blog. I’m such a foodie, and love to cook. If you follow me on Snapchat you know that I’m always snapping whatever I’m eating or cooking. I’ve been a foodie for as long as I can remember. My husband and I eat constantly. We aren’t the typical breakfast, lunch, and dinner people… We eat at least 5 times or more a day!
Recently I’ve been trying to find more ways to incorporate avocado into my diet. Healthy fats are so important, and avocado is one of my all-time favorites! I’m a huge fan of guacamole, avocado toast, and adding avocado to my eggs in the morning, but this recipe is going to knock your socks off! Get ready for it….
Lately I’ve been on a smoothie/mocktail kick. This may be due to the fact that it’s been at least 90 degrees everyday in Austin the past couple of weeks… eek! I’ve also just found it fun to come up with new recipes and treat myself during Noah’s naps. It’s 2-3 hours of uninterrupted “me” time where I can jam out to some Meghan Trainor and leisurely whip up something delicious in the kitchen. Alright, let’s dive right in, you’re going to love this!
Ingredients: (makes 1-2 servings)
1/4 Del Monte Fresh Avocado
juice from 2 big oranges (or 3/4 cup of orange juice)
1/4 cup water
handful of ice
Toss all ingredients into a blender & blend until smooth. You might need to add more or less orange juice depending on what you want the consistency to be. Toss in a straw, and enjoy!
