One of the biggest hurdles with healthy recipes is that they take longer to make. Although some healthy recipes do take a long time to make, there’s also a lot of healthy recipes that don’t take long to make. Cue today’s recipe, my Easy Acai Bowl recipe with Coconut Water. I love using ZICO Coconut Water because it’s 100% coconut water with no sugar added.

I first had an Acai Bowl when Dylan and I were in Hawaii. We actually got engaged in Hawaii, and enjoyed quite a few Acai Bowls during our trip. I never really had thought about making my own acai bowl recipe at home until recently, and I’m so glad I did. They are surprisingly really easy to make! I’m pumped to share this acai bowl recipe with you guys today. Let me know what you think about it!

INGREDIENTS:

⅓ cup ZICO Natural Coconut Water

1 Banana

1 Acai Superfruit Pack (Sambazon is the brand I use, and you can find them in the freezer section)

Toppings: Blueberries, Strawberries, Granola, Bananas

INSTRUCTIONS:

1. Blend the Acai Superfruit Pack, ZICO Coconut Water, and 1 Banana in the blender
2. Top with the toppings of your choice, and enjoy!

    I LOVE Acai bowls, but when I’ve tried to make them myself I have trouble. The acai pack is difficult for me to blend when it’s frozen. Should I let it thaw a bit? I’d love to be able to make these at home!

    I never thought to add coconut water to my acai bowls! I have always been using coconut milk or almond milk! I will definitely need to give this a try!
