Breakfast Meal Prepping: My Egg Muffin Recipe!

Egg Muffins Recipe OMG you guys, this whole breakfast meal prepping thing has changed my life! Before I meal prepped my breakfast, I would literally make new eggs every single morning. With cleanup it always took me about 15 minutes. Now, I literally pull 2 egg muffins out of the fridge, pop them in the microwave, and eat them. Takes no time at all, and they are SO good!

I’m so happy I started doing this! We need all the extra time we can get in the morning! It’s great also because Emma loves eggs too, so she will sometimes eat one too. Noah isn’t a super big fan of eggs, so he usually sticks to his morning smoothie with dad.

I got so many questions about my recipe, so I wanted to share it here on the blog for easy reference. Dylan also ordered me a silicone pan on Amazon after he saw how difficult it was to clean off my regular one. I even greased the pan, and it was still a nightmare to clean. I HIGHLY recommend ordering this little silicone tray off of Amazon. It’s a life changer, and makes cleanup SO easy.

Egg Muffins Recipe

Sharing my recipe down below, but honestly you can throw anything into these. If you want to make the vegetarian, just toss in some veggies. You can also use any kind of cheese you would like.  You can literally just toss whatever you have in the fridge into these, and it works. I’ve been sticking to the same recipe, because I love it so much, but I’ll probably try something different eventually!

Ingredients:

Nonstick Cooking Spray or this Silicone Tray I snagged on Amazon (so much easier!)

9 Whole Eggs

Dash of Salt & Pepper

About 3-4 strips cooked diced bacon

1/2  cup diced red, yellow, or orange pepper

1/2 cup diced fresh mushrooms

3/4 cup shredded cheddar or parmesan cheese

Instructions:

  1. Preheat oven to 350 degrees. If you’re using a regular muffin tin, make sure to spray it with cooking spray
  2. In a mixing bowl whisk the eggs, season with salt & pepper, mix in the remaining ingredients
  3. Dump ingredients into the muffin tin & bake for 20-25 minutes
  4. If you’re using a silicone tray, I would place the tray on top of a cookie sheet before placing it into the oven

    We do these too! So easy in the mornIng! I usually add some spinach to get a teeny bit of greens in without having to actually eat greens in the morning ? and to sneak in some extra veggies for the kids!
    DEFINITELY going to try the silicone tray!
